On our video above we will be showing you the techniques used for cooking direct and indirect using the PK grill or the barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills  First of all let’s define Direct and indirect cooking. Direct cooking means using direct heat or placing the meat directly above the fire. This technique is used when the results you are looking for is seared meat or at least quick cooked meats such as steaks, hamburgers or chops. Indirect cooking is just the opposite of direct or quick cooking. In fact, Indirect cooking usually involves a much larger piece of meat such as pork shoulders, beef briskets, whole turkeys, chickens or whole racks of beef or pork ribs. I get hungry just talking about it. For direct cooking there are some things to remember. Don’t pile the charcoal against the casting wall…place in the middle of the bottom grate. Before you start to cook, make sure your charcoal or fuel (Wood) is ready. If you’re starting your fire with charcoal and starter fluid,  make sure your charcoal is gray hot.  If you put the meat on the barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills before the starter fluid is burned off you will pick up the flavor of the fluid in your meat. Not a good thing. I have found the best way to start charcoal is with one of these handy charcoal chimneys and the best part is you don’t even need lighter fluid. Just stick some newspaper underneath and light and in just a few minutes you’ll have hot coals.  Now that we have our charcoal ready let’s get it in to our Portable Kitchen Grill. All you have to do is lift up the hinged cooking grids and pour it in. You’ll want to wait until all the charcoal is gray hot. Once the coals are completely gray hot just spread them out evenly and then lower the grill lid. Since I want the entire grill, barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills  to be hot I open all the vents…the two on top and the dampers underneath until I’m ready to grill my steak. Today I’m cooking one of my favorite steaks the RIBEYE!  The reason I like this cut of meat is that it’s the most tender cut of beef and because of the marbling in the meat there is plenty of flavor.

I have one I have been marinating for about 30 to 45 minutes at room temperature. The marinade I like to use is made with olive oil and butter, lemon juice, chopped garlic and my special grill seasoning. Then we’ll add a surprise at the end. Now that I’m ready to cook, I want to close the vents on top of the grill and the damper underneath. The vent directly above the fire and the damper below the fire needs to be closed approximately one-third to one-half depending on the amount of charcoal used. Remember……..this is how you will control flair-ups on the meat.  If you experience a flair-up just close the vent on the top and this will smother the flames by cutting off the air supply. This fire is ready! Now using a pair of tongs Just place the steak directly on the grill above the fire.  This steak will need to cook about 5 to 7 minutes per side depending on how thick a cut of meat you have. The secret is to put your meat on the fire and close the lid of the PK grill, barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills and let the grill do the work. Our steak is ready and so we’ll take it off and let it rest at least 10 minutes before serving. Now we’re ready to serve our delicious ribeye steak. We’ll plate it up with a baked potato, crisp garden salad and what makes it really great are Mushrooms (spoon mushrooms on) Now that’s a steak!!!!! A PK grill rib eye Steak.

For Indirect cooking all you have to do is add Charcoal to the PK barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills
by using our charcoal chimney once again. By adding more charcoal we’ll have a bigger fire but remember we’re cooking Indirect and slower so we’ll need the extra cooking time. At this point you’ll need to open all the vents once again allowing all the cooking surface over the entire grill, barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills  to get hot. Now I have a well seasoned pork roast, a beef brisket and whole chicken that we’re going to to be cooking (Indirectly) or slow roasting in the Portable Kitchen Grill, barbeque grill, barbeque grills, BBQ Grill, BBQ Grills, BBQ smoker, BBQ smokers, charcoal smoker, charcoal smokers, barbecue grill, barbecue grills, Charcoal Grill, Charcoal Grills, Portable Kitchen, Portable Kitchens, charcoal grills. I can’t wait for this to get ready.

Once your meat is on for indirect cooking, then you’ll need to re-adjust all your vents. Let’s start with the vents over the meat by opening 1/3 and the damper below the meat shut completely off. The damper under the fire should be open one-third and the vent over the fire should be closed. Once this is done the heat and smoke will circulate like a convection oven. The only time you should lift the lid on your grill is to add charcoal or your favorite wood chips for smoking. I normally add the wood chips about the last hour of cooking time needed, and this will vary depending on what your cooking……brisket for instance takes a little for time than ribs or chicken.
