1] Make a Marinade sauce --handful of salt, handful of sugar, 3 spoonfuls of dry rubbed sage, a little garlic salt, a dash of Worcester Sauce, and then pour in a half cupful of Malt vinegar and a half cupful Olive Oil [it can be Corn Oil]
Mix with hands!
Using hands use all over bird & put back in Fridge over night
Prior to cooking [using indirect heating method] re baste the Turkey and put a little liquid inside[ i always put raw onions/celery inside bird]
Every time you redo coals -every two hours use your hands to massage the mixture into the bird--
